  • 1 egg
  • 70 g melted and cooled butter
  • 150 ml milk
  • 180 g all-purpose flour
  • 1 tsp baking powder
  • Zest of ¼ lemon
  • ¼ tsp ground nutmeg

For coating:

  • 50 g butter
  • 50 g sugar
  • 1 tsp ground cinnamon

Instructions

  1. Beat sugar and egg until light and frothy, using a whisk or mixer.
  2. Add melted butter and mix again for 1 minute.
  3. Stir in milk.
  4. In a separate bowl, whisk together flour, baking powder, nutmeg, and lemon zest. Gradually fold dry ingredients into wet ingredients just until combined.
  5. Grease six muffin tins with butter and dust with flour. Fill each about 2/3 full with batter.
  6. Bake at 190°C (375°F) for 20 minutes, until golden and a toothpick comes out clean.
  7. Remove from oven and let cool briefly before removing from tins.
  8. Melt butter on low heat. Mix sugar and cinnamon in a bowl.
  9. Brush doughnuts with melted butter on all sides, then roll them in the cinnamon sugar mixture to coat evenly.
  10. Serve warm, at room temperature, or even the next day—they stay soft and tasty!
