Ingredients

  • 2 large onions (approx. 350 g), finely diced
  • 2 kapia peppers (one green, one red or both red), finely diced
  • 1 ripe tomato (approx. 200 g), grated
  • 100 g green lentils, rinsed
  • ¼ bunch fresh parsley, chopped
  • ½ tsp ground cumin
  • ½ tsp freshly ground black pepper
  • Salt, to taste
  • 5 tbsp olive oil
  • 3 eggs

Instructions

  1. Place rinsed lentils in a large pot with plenty of water and 2 bay leaves. Simmer gently over low heat for about 20 minutes until tender but not mushy. Drain, reserving 200 ml of cooking water.
  2. Heat olive oil in a skillet over low heat. Sauté onions and peppers, stirring occasionally, for 15-20 minutes until very soft but not browned. Season with salt during cooking.
  3. Add grated tomato and chopped parsley to the skillet. Cook for 5 minutes until oil starts to separate around the edges.
  4. Stir in ground cumin and black pepper, then bring to a gentle boil.
  5. Add cooked lentils and 200 ml reserved cooking water. Simmer together for 2 minutes to meld flavors. Adjust salt as needed.
  6. In a separate pan, fry eggs sunny-side up with soft yolks.
  7. Serve the lentil stew hot, topped with a soft fried egg.
