Ingredients

  • 800 g strawberries (hulled and cleaned)
  • 3 bananas (approx. 400 g)
  • 2 tbsp lemon juice
  • 350 g sugar

Instructions

  1. Wash the strawberries thoroughly and sprinkle with sugar in a covered bowl. Let macerate for 12 hours until the strawberries release their juices.
  2. Place 1-2 small plates in the freezer to chill.
  3. Strain the juice from the strawberries into a wide pot and bring it to a boil. Boil the syrup for 10 minutes.
  4. Crush the strawberries and bananas together (using a food processor if desired).
  5. Add the fruit puree and lemon juice to the syrup and cook over medium heat for another 15 minutes, stirring frequently, especially towards the end to prevent burning. Lower heat as needed.
  6. Sterilize a 600 ml jar by washing, drying, and placing it in a preheated 200°C oven for 20 minutes.
  7. To test jam consistency, place a teaspoon of jam on a chilled plate for 1 minute. Tilt the plate—if the jam doesn’t run, it’s ready. If not, continue boiling in 5-minute intervals, retesting after each.
    Alternatively, use a candy thermometer; jam is ready at 103°C.
  8. Pour hot jam into the sterilized jar, wipe rims clean, and seal tightly. Invert jars for 10 minutes to create a vacuum seal.
  9. Wrap jars in a blanket and let cool overnight in a draft-free environment.
  10. Store jam in a cool, dark place like a cellar or pantry.
