This hearty Hungarian-style vegetable stew features tender peppers, onions, ripe tomatoes, Bulgarian semi-spicy peppers, and savory Polish sausage, simmered with dried beans (razalai) and aromatic paprika. Ingredients

  • 3 garden peppers (yellow or light green, approx. 300 g), cored and diced
  • 2 medium onions (approx. 200 g), thinly sliced

  • 2 Bulgarian semi-spicy peppers
  • 1 tsp sweet paprika
  • 150 g dried razalai beans
  • 1 Polish sausage (approx. 150 g), sliced into rounds or half-rounds
  • 1/4 bunch fresh parsley, chopped
  • 3 tbsp cooking oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat oil in a pot over medium heat. Add sliced onions and diced peppers. Sauté for 2 minutes.
  2. Cover and simmer on low heat for about 15 minutes, stirring every 5 minutes until vegetables are very soft.
  • For a quicker method, cook uncovered on medium heat, stirring frequently until vegetables soften and start to brown slightly.
  1. Add the dried razalai beans and chopped parsley. Cook, stirring occasionally, for another 5 minutes.
  2. Remove the pot from heat and stir in sweet paprika until the beans are evenly colored.
  3. Pour in 2 1/2 cups of water, season with salt and pepper.
  4. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 10 minutes. The beans will swell but not be fully cooked yet.
  5. Meanwhile, score the tomato skin with an “X,” blanch in boiling water for 15 seconds, peel off skin and remove stem area. Dice the tomato finely.
  6. Add diced tomato to the pot, cover, and cook for another 5 minutes.
  7. Add sliced sausage, cover, and simmer an additional 5 minutes. Adjust salt to taste.
  8. Serve immediately.
