IMPROMPTU LUXURY DESSERT WITH MASCARPONE, CHESTNUT PUREE & CHERRIES
This dessert was born from leftover treasures in the fridge and turned into a luxurious treat. Half a tub of mascarpone left from tiramisu, a pack of Hungarian chestnut puree with rum, and two jars of brandy-preserved sour cherries forgotten since summer—all blended into an elegant, effortless dessert.
When I asked Radu if he liked my improvisation, he replied perfectly: “What improvisation? This is luxury.” For him, it was a decadent flavor; for me, a quick delight. This creation also gave me time to organize my spice jars, hoping to join the ranks of tidy home chefs.
🕒 Prep Time: 5 min
🍽️ Servings: 2
Ingredients
- 125 g mascarpone cheese
- 70 g chestnut puree (Hungarian style with rum)
- 2-3 tbsp whipped cream (I used canned whipped cream for convenience)
- 1 small jar sour cherries (either compote or brandy-preserved)
Instructions
- Thoroughly mix the chestnut puree with mascarpone until smooth.
- Gently fold in whipped cream to lighten the mixture and add fluffiness.
- Taste the mixture; add vanilla sugar if desired (not necessary if your chestnut puree is already sweet).
- In glass cups or dessert glasses, layer the mascarpone-chestnut mixture with generous spoonfuls of cherries (include some cherry juice for extra flavor).
- Alternate layers as desired, finishing with a cherry layer on top.
Note: For an adult version, brandy-preserved cherries add depth and sophistication. For children, use cherries from compote.
💡 Tips
- Use whipped cream to create a light, airy texture.
- Incorporate cherry juice between layers for moistness and flavor.
- No added sugar needed if chestnut puree is sweet enough.
🍽️ Perfect For
- Quick, elegant desserts
- Using up fridge leftovers
- Adult-friendly treats with a boozy twist
