INDIAN-STYLE SPICED CAULIFLOWER AND PEAS

A quick and flavorful sautéed cauliflower and peas dish infused with aromatic Indian spices and fresh ginger. Perfect as a light side or vegetarian main, cooked in a wok or wide pan for even cooking.

⏲️ Prep Time: 5 min

🍳 Cook Time: 20 min

🍽️ Yields: 2 servings

🥣 Ingredients

  • 400 g cauliflower (about half a medium head), cut into florets and sliced
  • 70 g frozen peas
  • 1 heaping teaspoon fresh grated ginger paste
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon ground fennel
  • 1/8 teaspoon chili powder
  • 1/4 teaspoon turmeric
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons oil

👩‍🍳 Instructions

  1. Heat oil in a large wide pan (25–30 cm) or wok with a lid until hot.
  2. Add ginger paste and sauté quickly for about 15 seconds.
  3. Add cauliflower slices, sprinkle with salt, and sauté over medium heat for 2 minutes.
  4. Drizzle 1 teaspoon water into the pan, listen for sizzling, then immediately cover with lid to steam.
  5. Cook cauliflower covered for 10 minutes, stirring once halfway through.
  6. Add peas, ground spices, and freshly ground black pepper. Stir well to coat cauliflower evenly, about 1 minute.
  7. Cover and cook for another 5 minutes.
  8. Remove lid, taste, and adjust salt if needed. If cauliflower lacks browning, increase heat to medium and sauté uncovered for 1 more minute.

💡 Tips

  • Use a cast iron or heavy-bottomed pan for even heat retention.
  • Cut cauliflower slices evenly for consistent cooking.
  • Fresh ginger paste adds bright, zesty flavor; substitute with minced fresh ginger if needed.
  • Stir carefully to avoid breaking florets.
