These rich chocolate cookies bring to mind a piece of classic brownie—soft and tender inside with a deep cocoa flavor. One of their best qualities is how easy they are to make. Ingredients

  • 280 g all-purpose flour (BL 55)
  • 65 g cocoa powder

  • ¼ tsp salt
  • 200 g brown sugar (I used 150 g light brown + 50 g raw sugar)
  • 1 packet vanilla sugar
  • 1 whole egg
  • 1 egg yolk
  • Granulated sugar or vanilla powdered sugar for coating

Instructions

  1. Melt butter over low heat and let it cool completely (just cooled, not melted cold).
  2. Sift together flour, cocoa powder, cinnamon, salt, baking powder, and baking soda.
  3. Beat the sugars with the eggs using a mixer until thick and creamy, about 5 minutes, until the color resembles milky coffee.
  4. Gradually add the melted butter in a thin stream while continuing to beat. The mixture will thicken and show whisk marks.
  5. Add the flour mixture in two batches, folding gently with a spatula just until absorbed. Do not overmix. The dough will be firm, moldable, and non-sticky.
  6. Scoop heaping tablespoons (about 55-60 g each) and form balls. Roll each ball in granulated sugar or vanilla powdered sugar.
  7. Bake at 175°C (350°F) for 15-17 minutes. Cookies will be soft when removed but will firm up as they cool.
  8. Use a wide spatula to carefully lift cookies off the tray once cooled.
