Ingredients
- 8 eggs
- 1 tbsp sour cream
- ½ pack (450 g) frozen mixed mushrooms (pleurotus, champignon, shiitake, porcini, morels)
- 1 sprig fresh thyme
- 1 small bunch chives (green onions)
- 75 g goat cheese
- Salt, black pepper, chili flakes to taste
- 2 tbsp olive oil
Instructions
- In a large skillet, thaw frozen mushrooms until soft and releasing juice. Remove mushrooms and press out excess liquid. Save mushroom juice for other recipes or freeze.
Skip this step if using fresh mushrooms. - Heat olive oil in a 22–25 cm ovenproof skillet. Add mushrooms and sauté over medium heat until lightly browned on all sides.
- Lightly beat eggs until combined. Add sour cream, finely chopped chives, thyme leaves, salt, pepper, and chili flakes. Beat again until smooth.
- Pour egg mixture evenly over the mushrooms in the skillet. Avoid stirring or shaking the pan.
- Crumble goat cheese over the top to cover the surface. By now, edges of the frittata should start to set.
- Transfer skillet to preheated oven at 190°C (375°F). Bake for up to 10 minutes. Check at 5 minutes — frittata should be slightly puffed and set on top with no raw egg visible.
- Remove from oven and serve warm or let cool to room temperature. Slice into wedges for an elegant presentation.
