Instructions

- Arrange grilled slices side by side on a large plate. Season with coarse salt and freshly ground black pepper.
- Generously grate sheep cheese over the hot zucchini slices—the cheese will melt slightly.
- Sprinkle chopped fresh mint leaves on top.
- Cover the plate with foil to keep warm while grilling the next batch.
- Repeat layering zucchini slices, seasoning, cheese, and mint until all slices are grilled.
- Reserve any remaining grated cheese in a bowl for serving alongside.
- Serve warm with extra grated cheese on the side.
