Ingredients

  • 1.5 kg fish (hake, cod, dorado, mackerel, etc.)
  • 1 onion, finely chopped
  • 4 garlic cloves, crushed
  • 1 can (400 g) tomatoes, drained and crushed
  • 5 starchy potatoes, peeled and diced
  • 2 tsp turmeric powder
  • 1 tsp curry powder
  • 1 tsp garam masala
  • 4 chili flakes, freshly ground (adjust to taste)
  • 2 tbsp flour
  • 4 tbsp oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Clean the fish by removing intestines and scales, then cut off the head and tail (save these for fish stock if desired). Cut fish into pieces that fit comfortably in your cooking pan.
  2. Mix flour with 1 tsp turmeric, 1 tsp salt, and 1 tsp pepper. Pat the fish pieces dry with paper towels and dredge them lightly in the flour mixture.
  3. Heat oil in a large pan and fry the fish pieces for about 2 minutes per side until lightly golden. Remove and keep warm.
  4. In the same oil, sauté the chopped onion until soft. Add crushed garlic and cook for 1 more minute.
  5. Add the drained canned tomatoes, chili flakes, remaining turmeric, garam masala, and curry powder. Cook, stirring occasionally, for 5 minutes until fragrant and the oil starts to separate.
  6. Add 2½ cups of water and diced potatoes. Simmer over medium heat for 30–40 minutes until the potatoes are tender and beginning to mash. Use a potato masher to crush some potatoes, thickening the curry sauce. Adjust salt and spices to taste.
  7. Return the fish pieces to the curry, reduce heat to low, cover, and simmer gently for 10 minutes until the fish is cooked through.
  8. (Optional) Stir in 2 tablespoons of sour cream, yogurt, or coconut milk before adding the fish for extra creaminess.
  9. Garnish with chopped parsley and serve hot with steamed rice.
