Ingredients

  • 400 g dried red beans or pinto beans

Instructions

  2. Cook beans in a pressure cooker for 45 minutes or simmer in plenty of water for at least 2 hours, adding boiling water as needed. Do not add salt during cooking.

  3. Once beans are tender, drain most of the water, leaving just enough to cover the beans.
  4. Add roasted garlic cloves, tomatoes, sunflower oil, bay leaves, cumin, oregano, salt, and pepper. Stir well.
  5. Simmer gently over low heat, stirring frequently to prevent sticking, until most of the liquid evaporates and the beans thicken, about 1 hour.
  6. Mash beans using a potato masher or blend for a smoother texture.
