Ingredients
For the Potatoes:
- 500 g new potatoes
- Salt and freshly ground black pepper
Mint Flavored Butter:
- 100 g butter (80% fat, room temperature)
- 4 tbsp extra virgin olive oil (30-35 ml)
- 12β15 large fresh mint leaves
- Zest of 1/2 small lemon
- 1 tbsp lemon juice
Instructions
- Cut the butter into chunks and place in a food processor. Add olive oil, chopped mint leaves, lemon zest, and lemon juice.
- Blend until the mint is finely chopped and the mixture forms a smooth, homogeneous paste. Refrigerate. Thanks to the olive oil, the butter remains soft and spreadable even when cold.
Note: This makes more butter than needed for the potatoes, but it keeps well for about a week and can be used for grilled meats, sandwiches, and more. - Clean the new potatoes by either scrubbing with coarse salt and a metal sponge or peeling them with a knife. Cut the potatoes lengthwise into halves or quarters depending on size.
- Boil the potatoes in salted water until a fork slides in easily. Drain and place in a bowl.
- Add 2 generous teaspoons of the mint butter, season with salt and freshly ground black pepper, and gently toss so the butter melts and coats the potatoes evenly.
- Serve immediately.
