OVEN-ROASTED MUSHROOMS IN OLIVE OIL WITH HERBS

Tender, flavorful mushrooms slow-cooked in aromatic olive oil with garlic and herbs. This versatile dish can be served whole or sliced and adds a rich, savory note to any meal. The infused oil is perfect for drizzling over salads, spreading on toast, or enhancing sauces.

🕒 Prep Time: 10 min

🍳 Cook Time: 1–1.5 hours
🍰 Yields: About 4 servings as a side or appetizer

Ingredients

  • 500 g mushrooms (preferably brown champignon)
  • 500 ml olive oil
  • 1 garlic clove, sliced
  • 2 sprigs fresh or dried thyme
  • Salt, to taste
  • Optional: 1 sprig rosemary, tarragon, or 1 bay leaf

Instructions

1. Prepare the Mushrooms

  • Remove mushroom stems and gently wipe caps with a damp cloth.
  • Place mushrooms in a wide, oven-safe dish, allowing some crowding as they will shrink during cooking to form a single layer.
  • Sprinkle with salt and toss gently.

2. Add Aromatics and Oil

  • Scatter garlic slices and thyme sprigs evenly among the mushrooms. Add optional herbs if desired.
  • Pour enough olive oil to cover the mushrooms’ first layer (approximately 2 cups, depending on your dish size).

3. Heat and Roast

  • Place the dish on the stove over medium heat and warm the oil just until tiny bubbles form around the mushrooms.
  • Immediately transfer the dish to a preheated oven at 90°C (195°F).
  • Roast for 1 to 1.5 hours, or until mushrooms are tender and buttery inside—check by tasting. Cooking time varies by mushroom size.
  • Turn off the oven and let mushrooms cool inside.

4. Store and Serve

  • Transfer mushrooms to a clean jar, pouring in enough olive oil to cover completely. Avoid adding the dark mushroom juice from the bottom of the baking dish, as it shortens shelf life.
  • The remaining aromatic oil can be frozen and used later in rice dishes, bruschetta, sauces, or for frying bread and omelettes.
  • Keep refrigerated; mushrooms last about 2 weeks.

💡 Tips

  • Use gentle heat to slowly infuse flavors without frying the mushrooms.
  • The infused olive oil is a flavorful byproduct—save it for cooking and dressing dishes.
  • Serve mushrooms whole for presentation or sliced for easy use in recipes.
  • Adjust herbs to your preference; rosemary and tarragon add lovely variations.

  • Appetizers and side dishes
  • Enhancing salads, sandwiches, and warm dishes
  • Flavoring Mediterranean-style meals
