Ingredients

  • 4 starchy or medium-starchy potatoes
  • 1 tbsp sesame seeds
  • 2-3 tsp za’atar
  • 1/4 tsp pul biber (or chili flakes)
  • 3 tbsp olive oil
  • Salt (to taste)

Instructions

  1. Prepare potatoes:
    Peel and cut potatoes into 1.5 – 2 cm cubes. Boil in salted water for about 10 minutes — potatoes should be halfway cooked, fork-tender but still firm.
  2. Drain and dry:
    Drain the potatoes well and shake the colander several times to evaporate excess water. Transfer potatoes to a mixing bowl.
  3. Season:
    Add za’atar, chili flakes, and a pinch of salt (be cautious since za’atar is slightly salty). Toss gently.
  4. Add oil and sesame:
    Pour in olive oil and add sesame seeds. Mix again until potatoes are evenly coated.
  5. Roast:
    Spread potatoes evenly on a baking sheet. Roast at 220°C (430°F) for 20-25 minutes, stirring twice during cooking to ensure even crisping.
