Ingredients

  • 2.5 kg gogosari (Romanian sweet red peppers), cored and sliced
  • 250 g mustard
  • 250 ml white wine vinegar
  • 250 ml oil
  • 250 g sugar

  • 3 bay leaves
  • 1 tsp whole black peppercorns
  • Approx. 2 tbsp pickling salt

Instructions

  1. Clean and core the gogosari, then slice into strips.
  2. In a large pot, combine oil, vinegar, sugar, mustard, turmeric, bay leaves, and peppercorns. Bring to a boil and simmer for 5 minutes until the mixture thickens slightly and becomes homogeneous.
  3. Add sliced peppers and pickling salt to the pot. Stir wellβ€”there will seem to be little sauce but it’s sufficient. Cover and simmer gently over medium heat for 10 minutes, stirring occasionally.
  4. Remove the lid and simmer uncovered for another 5–10 minutes until the peppers soften and the sauce nearly covers them.
  5. Adjust salt if needed and cook for 1 more minute.
  6. Pack the peppers and sauce into sterilized jars, seal tightly. Turn jars upside down for 10 minutes to create a vacuum seal.
  7. Wrap jars in a blanket and leave to cool overnight.
  8. Store in a cool, dark place.
