QUICK APPLE CRUMBLE PARFAIT – A SIMPLE, NOSTALGIC DESSERT
Last night, we ordered pizza and had goat cheese with tomatoes during the day, so for dessert, I whipped up a quick treat from some stray apples at home. It reminded me of the grated apple biscuits I loved as a child.

Ingredients
- 4 apples
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 50 g nuts (walnuts, almonds, pistachios, etc.)
- 50 g plain biscuits
- 5-6 tbsp brown sugar
- Juice of 1/2 small lemon
- 1 tbsp butter
- 2 tsp flavored yogurt (vanilla, muesli, or nutty flavors all work well)
Instructions
- Core and peel the apples, then slice into rounds about 0.5 cm thick. Cut slices into small cubes. Toss cubes with lemon juice to prevent browning.
- Finely grind nuts and biscuits (I used a coffee grinder). Toast this mixture in a dry pan over high heat with 3 tbsp brown sugar, stirring until lightly browned. Remove from heat and cool completely.
- In a separate pan, melt butter and add the apple cubes, 2-3 tbsp brown sugar, cinnamon, and ginger. Sauté gently for about 5 minutes until apples soften slightly but still hold shape. Remove from heat and let cool.
- Refrigerate both mixtures until ready to serve.
- To assemble, layer in glasses starting with nut-biscuit crumble, then apple mixture, repeating until glass is full.
- Top the final apple layer with a teaspoon of flavored yogurt and sprinkle with some of the nut-biscuit mixture for crunch.
