Instructions

  • Warm milk in a saucepan and melt butter in it. Let cool slightly.
  • Add beaten egg yolks and sugar; stir for 15 seconds to dissolve sugar.
  • Combine liquid mixture with yeast, flour, and salt.
  • Knead in bread machine on dough and rise program; after cycle ends, let dough rise 1 more hour in machine.

  1. Soak Raisins
  • Soak raisins in warm water mixed with rum or sweet sherry.
  • Drain and squeeze dry using a kitchen towel or cheesecloth.

  • Roll dough on floured surface to about 30 x 45 cm rectangle.
  • Sprinkle brown sugar evenly over dough, then scatter drained raisins.
  • Roll dough tightly from the short edge into a log.

  • Place roll into a buttered 30 x 12 cm loaf pan.
  • Cover with a large plastic bag and let rise in a warm place for 2 hours (e.g., near a radiator).

  • Preheat oven to 220°C (428°F).
  • Brush loaf with beaten egg yolk mixed with milk.
  • Place in oven, immediately reduce temperature to 180°C (356°F).
