- 250 g sugar

- Add apples and process or grate until finely chopped as well.
- Zest the lemon, then peel it, remove the pulp, and carefully remove any seeds.
- Combine beetroot, apples, lemon pulp, sugar, and ¼ cup water in a pot. Cook over low heat, stirring frequently until sugar dissolves completely.
- Increase heat to medium-low and simmer for 25 minutes, stirring occasionally. Be cautious as the jam may splatter—use a splatter guard or cook on a back burner.
- Optional: For a smoother texture, blend the jam using a blender or immersion blender. The jam is delicious even with some texture.
- Stir in the lemon zest and cook for 1 additional minute.
- Pour jam into a clean jar and refrigerate. Keeps for up to 2 weeks.
