ROASTED PEPPER & VEGETABLE STEW WITH CHEESE-STUFFED PEPPERS

Ingredients
- 200 g Danish White cheese (or feta, telemea)
- 5 green and/or yellow bell peppers
- 3 green hot chili peppers
- 1 very small eggplant
- 2 large onions, sliced
- 4 large ripe tomatoes
- 1 tsp oregano (or Herbes de Provence)
- 2 tbsp vegetable oil
- 3 tbsp extra virgin olive oil
- Salt and black pepper, to taste
Instructions
- Preheat oven to 220Β°C. Place 3 bell peppers, the hot chili peppers, and salted, lightly oiled slices of eggplant on a baking tray. Roast for 20 minutes, flipping eggplant halfway through and brushing with a little oil to prevent drying.
- Meanwhile, bring a pot of water to boil. Score tomatoes with an X, blanch for 10 seconds, remove, and peel off skins.
- Slice remaining 2 bell peppers lengthwise, remove seeds, and cut into thin strips. Slice onions.
- In 2 tbsp vegetable oil, sautΓ© bell pepper strips for a few minutes. Add onions, sprinkle with salt, and cook until soft.
- Blend peeled tomatoes until smooth. Add to sautΓ©ed vegetables with salt, pepper, and oregano. Simmer for 15 minutes on medium heat.
- Cut slits in roasted bell peppers, remove seeds and stems, then stuff with cheese.
- Once the stew has thickened, stir in olive oil. Gently add eggplant slices, hot chili peppers, and stuffed bell peppers into the sauce. Drizzle stuffed peppers with some sauce. Cover and simmer for 10 minutes on low heat.
- Serve hot with rustic bread, plating vegetable stew with one hot chili and one stuffed pepper per serving.
