Roasted Potatoes with Paprika and Parsley
My everyday favorite potatoes — I never give them up, not even at the holidays! For Christmas, I suggest roasting them with paprika and parsley. They pair perfectly with pork roast or smoked ribs. The special flavor comes from the paprika gently toasted in the oven, releasing deep, smoky notes. Use good quality paprika — real paprika, not the bland “brick dust” kind — to get the best taste and color.
You can easily double the recipe and roast in a large oven tray if hosting many guests.

Ingredients
- 850 g potatoes
- 1/2 tbsp sweet paprika
- 1/4 tsp chili powder (or hot paprika)
- 1/8 tsp black pepper
- 1/2 tsp salt
- 3-4 garlic cloves
- 1/2 bunch parsley
- 4 tbsp oil (or melted duck fat)
- 1/2 tbsp butter
Instructions
- Peel the potatoes and slice lengthwise into 4 or 6 slices, depending on size.
- Toss potatoes with salt, pepper, paprika, and chili powder. Add 3 tablespoons oil and finely chopped parsley, mixing thoroughly to coat evenly.
- Spread potatoes in a baking tray large enough so they fit snugly but not crowded (I used a 25 x 35 cm tray). This helps them steam slightly instead of burning the paprika.
- Roast in a preheated oven at 200°C (390°F) for 15 minutes.
- Crush garlic cloves and mix with 1 tablespoon oil. Add this over the potatoes and gently stir. Return tray to oven.
- After another 15 minutes, gently stir again and roast until potatoes are tender and cooked through (about 5-10 more minutes).
- Add butter flakes over potatoes and gently mix without breaking the slices. Serve immediately.
