Ingredients

  • 600 g small new potatoes
  • Granulated garlic (to taste)
  • Curry powder (to taste)

  • 4 tbsp oil

Instructions

  1. Wash the potatoes well with a rough sponge.
  2. Place potatoes in a pot with enough water to cover them and add 2 Β½ teaspoons of salt. Boil for up to 10 minutes from when the water starts boiling, until a fork pierces them easily.
  3. Heat oil in a wide skillet (I used a 30 cm pan so all potatoes fit in one batch). Drain the potatoes and add them to the skillet, stirring to coat with oil.
  4. Using the bottom of a jar or a potato masher, gently crush the potatoes so some break apart while others keep their shape. This creates a nice textural contrast β€” the broken pieces soak up flavors better.
  5. Season generously with salt, pepper, granulated garlic, and curry powder (or your favorite spices/herbs like rosemary).
  6. Fry for 5 minutes on one side until crispy. Flip, season again, and fry another 5 minutes until golden and crunchy on the other side.
  7. Serve straight from the skillet for a rustic presentation.
