Ingredients

  • 250 g fresh pork sausages (4 thin or 2 thick)

  • 2 mildly spicy Bulgarian peppers
  • 1 medium onion (about 150 g), sliced moderately thick
  • 1 small tomato (about 100 g), grated
  • 1 tbsp tomato paste
  • 50 ml dry white wine
  • 1 tsp dried oregano
  • 4 tbsp olive oil
  • Salt and freshly ground black pepper

Instructions

1. Brown the Sausages and Peppers

  • Heat olive oil in a wide pot over medium heat.
  • Fry sausages on both sides until lightly browned. Add the Bulgarian peppers alongside while frying.
  • Remove sausages and peppers to a plate.

2. Cook the Vegetables

  • In the same oil, add the sliced sweet peppers and onion. Sauté for 2 minutes.
  • Season with salt and pepper, cover the pot, reduce heat to low, and let vegetables steam for 20 minutes, stirring occasionally and watching to avoid burning.
  • The vegetables will soften and release their juices.

3. Add Tomato and Simmer

  • Stir in tomato paste and cook for 2 minutes.
  • Add grated tomato, white wine, and about ⅓ cup (80 ml) water.
  • Return sausages and Bulgarian peppers to the pot.
  • Cover and simmer on low heat for about 20 minutes until the peppers are tender.

4. Finish and Serve

  • Stir in oregano, shake the pot to mix, and simmer for 1 more minute.
  • Serve sausages and peppers hot on a bed of soft polenta.
