Ingredients

Dough:

  • 450 g all-purpose flour
  • 210 ml warm water

  • ¼ teaspoon dried thyme
  • 1 teaspoon poppy seeds
  • 1 garlic clove, crushed
  • 1 tablespoon oil
  • Salt, to taste

Instructions

1. Prepare the Dough

  • In a bread machine, add all dough ingredients and run the kneading and rising program.
  • If kneading by hand, dissolve yeast and sugar in warm water, add remaining ingredients, and knead until elastic and dough pulls away from hands.

2. Prepare the Filling

  • Heat oil in a pan and sauté chopped onion with salt until softened.
  • Add crushed garlic and thyme, cook another minute.
  • Stir in poppy seeds and mix well. Remove from heat and cool.

3. Shape and Fill the Buns

  • After dough has risen, divide into 6 equal portions.
  • Shape each portion into a smooth ball by tucking edges underneath.
  • Place buns rounded side up on a parchment-lined surface dusted with flour. Cover and let rise for about 1 hour until doubled.
  • Transfer buns to a baking sheet (they will deflate slightly).
  • Press a wide crater into the center of each bun with your finger.
  • Fill each crater with about 2 teaspoons of the cooled onion and poppy seed filling.

4. Bake

  • Preheat oven to 220°C (430°F).
  • Place a pot of water on the bottom rack to create steam.
  • Bake buns for 15 minutes.
  • To achieve a golden crust, switch to grill and grill buns for 1–2 minutes, watching closely to avoid burning.
