Ingredients

  • 150 g feta cheese (or sheep/goat telemea)
  • 50 ml extra virgin olive oil
  • 1 semi-spicy Bulgarian pepper (about 15–20 g)

Instructions

  1. Choose the best quality ingredients: a good feta or a creamy, crumbly telemea (avoid rubbery or very salty telemea). Use a mild, fruity olive oil, not bitter.
  2. Place the cheese in a food processor and blend until finely crumbled (about 1 minute).
  3. Gradually add olive oil just until the cheese binds together and leaves traces on the processor blades. The spread should be firm enough to hold its shape but soft enough to spread.
  4. Remove seeds and core from the pepper. Chop it as finely as possible.
  5. Add half the chopped pepper to the cheese and blend for 15 seconds. Add the remaining pepper and pulse briefly (2–3 seconds) to mix.
  6. Transfer the spread to a bowl, drizzle with a little olive oil, and optionally sprinkle oregano on top. Serve with grilled pita and pork skewers.
