SWEET NEW POTATOES WITH SPINACH IN GREEK-STYLE TOMATO SAUCE

Today’s stars are my grandmother’s new potatoes—sweet and buttery like I haven’t tasted in ages. I brought a few kilos home, so expect more delicious new potato recipes soon! Even the greens beneath them are not to be overlooked. This simple, hearty dish will surprise you.

🥄 Ingredients

  • 350 g spinach, cleaned and sorted
  • 1 large bunch green onions (about 100 g), sliced
  • 1/2 bunch parsley, chopped
  • 3–4 sprigs fresh dill, chopped
  • 300 ml Greek-style tomato sauce*
  • 750 g new potatoes (about 5 medium), peeled and quartered
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp oil

*Tomato sauce prepared as per recipe here, with an added generous pinch of ground nutmeg (about 1/4 tsp). If using plain tomato sauce, add nutmeg at the step when water is added.


👩‍🍳 Instructions

  1. 🌿 Chop spinach roughly and wash thoroughly. Slice green onions. Finely chop parsley and dill.
  2. 🔥 Heat oil in a large, deep skillet (about 30 cm diameter). Sauté green onions until soft, about 3 minutes.
  3. 🍅 Add tomato sauce and 250 ml water, bring to a boil.
  4. 🥔 Add quartered potatoes, season with salt and pepper, cover, and cook until potatoes are tender (20–25 minutes). Test by piercing with a fork.
  5. 🌱 Add spinach in 3–4 batches, stirring after each addition until wilted. Mix in parsley and dill, adjust salt if needed. Cover and cook another 5 minutes.
  6. ⏸️ Remove from heat and let rest covered for 10 minutes.
  7. 🍽️ To serve, transfer the greens mixture onto a platter, arrange potatoes on top. Serve warm. This dish reheats well.
