Ingredients
For the sweet potatoes:

- 50 g soft goat cheese

- 1 small red onion
- 3 tbsp lemon juice (or lemon + lime juice mix)
- 3 tbsp olive oil

- Roast the sweet potatoes:
Peel and cut the sweet potatoes into cubes. Toss with salt, pepper, allspice, and olive oil. Roast at 220Β°C (430Β°F) for about 20 minutes until tender and lightly browned. Remove and let cool. - Marinate the onions:
Slice the red onion thinly. Sprinkle with salt, toss, and let sit 10 minutes to soften. Squeeze out the liquid. Add lemon (and lime) juice and let marinate for 15 minutes. - Prepare parsley and lime:
Chop parsley finely. Grate lime zest over it and chop again to mix the flavors well. - Combine:
Add parsley and lime mixture to the marinated onions, along with olive oil. Toss and let rest a little for flavors to meld. - Assemble the salad:
