- Heat 2 tbsp olive oil in a wide pot large enough to hold meat in a single layer. SautΓ© onions over medium heat until softened (about 10 minutes).
- Add pork slices and sear on both sides until browned and color changes.
- Stir in crushed garlic, tomato paste, and pepper paste. Season with salt and freshly ground black pepper. Mix until pork is evenly coated.
- Sprinkle chopped thyme over the meat (or strip leaves from savory sprigs and scatter).
- Layer green beans evenly over the pork, then arrange tomato slices on top. Sprinkle a little salt and drizzle remaining olive oil over everything.
- Pour 250 ml water around the edge of the pot. Bring to a boil, then cover with a lid.
