Ingredients

Instructions

  1. Marinate Veal:
    Season veal cubes with salt, cumin, chili flakes, and crumbled oregano. Mix well. Add olive oil and combine thoroughly. Refrigerate for at least 4 hours.
  2. Prepare Onion:
    Slice onion into thin half-rings, separate the rings, and sprinkle with salt. Let sit for 10 minutes to soften and release juice. Add lemon juice and let marinate 15 more minutes. Stir in olive oil and sumac.
  3. Prepare Skewers:
    Thread about 6 pieces of veal onto each skewer. Allow skewers to come to room temperature for about 30 minutes before grilling.
  4. Grill Veal:
    Preheat a grill pan on high without oil. Grill skewers for 3 minutes per side, turning and also grilling the sides for about 1 minute. Avoid overcookingβ€”veal cutlets dry out quickly; tenderloin is a bit more forgiving.
