Ingredients

  • 1 kg new potatoes
  • 15 olives (green or black)
  • 500 g ripe tomatoes
  • 1 medium onion
  • 2 garlic cloves
  • 1/4 tsp ground cumin
  • 1 1/2 tsp dried oregano
  • 1 tsp vinegar (red or white wine)
  • 1/2 tsp sugar
  • 200 g feta cheese (or Telemea sheep cheese)
  • 4 tbsp olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Heat 2 tbsp olive oil in a pan. Add finely chopped onion and cook until just softened (about 5 minutes).
  2. Add crushed garlic and cook for 1 more minute.
  3. Grate the tomatoes and add them to the pan along with cumin, 1 tsp oregano, vinegar, sugar, salt, and black pepper. Simmer gently until the sauce thickens slightly (about 10 minutes).
  4. Meanwhile, scrub or peel the potatoes and slice them into rounds. Season lightly with salt and pepper.
  5. Pour the tomato sauce over the potatoes and mix gently to coat.
  6. Spread the potatoes evenly in a baking dish. Scatter olives among the potatoes. Pour 50 ml water along the edge of the dish.
  7. Bake at 200Β°C for 30 minutes.
  8. Sprinkle the feta cheese over the potatoes, drizzle with the remaining olive oil and oregano.
  9. Bake for an additional 15–20 minutes until potatoes are fully cooked and feta is slightly browned.
  10. Serve immediately. Leftovers reheat well in the oven.
