Ingredients
- 1 kg new potatoes
- 15 olives (green or black)
- 500 g ripe tomatoes
- 1 medium onion
- 2 garlic cloves
- 1/4 tsp ground cumin
- 1 1/2 tsp dried oregano
- 1 tsp vinegar (red or white wine)
- 1/2 tsp sugar
- 200 g feta cheese (or Telemea sheep cheese)
- 4 tbsp olive oil
- Salt and freshly ground black pepper
Instructions
- Heat 2 tbsp olive oil in a pan. Add finely chopped onion and cook until just softened (about 5 minutes).
- Add crushed garlic and cook for 1 more minute.
- Grate the tomatoes and add them to the pan along with cumin, 1 tsp oregano, vinegar, sugar, salt, and black pepper. Simmer gently until the sauce thickens slightly (about 10 minutes).
- Meanwhile, scrub or peel the potatoes and slice them into rounds. Season lightly with salt and pepper.
- Pour the tomato sauce over the potatoes and mix gently to coat.
- Spread the potatoes evenly in a baking dish. Scatter olives among the potatoes. Pour 50 ml water along the edge of the dish.
- Bake at 200Β°C for 30 minutes.
- Sprinkle the feta cheese over the potatoes, drizzle with the remaining olive oil and oregano.
- Bake for an additional 15β20 minutes until potatoes are fully cooked and feta is slightly browned.
