VERSATILE FILLED NESTS – SWEET OR SAVORY DELIGHTS
These soft, fluffy nests with various fillings will please everyone in the family. Choose sweet fillings like jam or cheese, or get creative with poppy seeds, nuts, dried fruits, or even savory options like sausage, ragout, or cabbage. Adjust the dough sugar for sweet or savory variations.

Ingredients
Dough:
- 450 g all-purpose flour
- 1 packet dry yeast (7 g)
- 250 ml warm milk
- 1 egg yolk
- 60 g softened butter + 1 tbsp melted butter
- 4 tbsp sugar
- Pinch of salt
Fillings
Cheese filling (for 15 nests):
- 150 g cow cheese (ricotta or fresh cheese)
- 1 egg yolk
- 3 tbsp heavy cream (unwhipped)
- 2-3 tbsp sugar
Jam or preserves:
- Any flavor, e.g., plum jam or sour cherry preserves
Topping:
- 1 tbsp melted butter
- 3 tbsp sugar
- 1 heaping tbsp flour
- 1 tsp ground cinnamon
Instructions
- Cream softened butter with sugar until smooth. Add egg yolk and mix well.
- In a bread machine, add the butter mixture, warm milk, yeast, flour, and salt in order. Set machine to knead and rise program.
- If mixing by hand: Combine all ingredients and knead until elastic and smooth. Cover and let rise 1–2 hours in a warm place until doubled in volume.
- Meanwhile, prepare cheese filling by mixing cheese, egg yolk, cream, and sugar until smooth.
- Combine topping ingredients until crumbly, similar to coarse breadcrumbs.
- Line a 22 x 33 cm baking tray with parchment paper.
- Divide dough into 15 equal balls. Place balls on tray spaced 1–2 cm apart. Brush with melted butter. Cover with plastic bag and let rise 30 minutes.
- Using your fingers or the back of a spoon, create a crater in the center of each ball, large enough to hold at least 1 tablespoon of filling.
- Fill each crater with about 1 tablespoon of filling, alternating between jam and cheese or any fillings you prefer.
- Note: Cheese filling is enough for all 15 nests.
- Sprinkle topping evenly over edges of nests.
- Bake in a preheated oven at 190°C for 35 minutes until golden and cooked through.
