Ingredients

Dough:

  • 400 g all-purpose flour
  • 40 g sugar
  • Β½ tsp salt
  • 1 packet dry yeast (8 g)
  • 1 packet vanilla sugar (e.g., bourbon vanilla)
  • 2 eggs (room temperature)
  • 60 g melted butter
  • 80 ml warm milk
  • 60 ml warm water

Filling:

  • 100 g sugar
  • 150 g butter
  • 100 g ground walnuts
  • Cinnamon (optional)
  • Optional: a handful of raisins soaked in warm water or rum

Syrup:

  • 150 ml water
  • 100 g sugar

Instructions

  1. Mix flour, sugar, and salt in a bowl.
  2. Beat eggs and combine with warm milk, warm water, and melted butter.
  3. In a bread machine: Pour egg mixture first, sprinkle dry yeast and vanilla sugar on top, then add flour mixture. Set to knead and rise.
  • Alternatively, knead dough by hand and let rise in a warm place for 1 hour.
  1. For the filling, cream butter with sugar until fluffy. Grind walnuts finely.
  2. Turn risen dough onto a floured surface, knead lightly, and roll out into a 30 x 50 cm sheet.
  3. Spread the butter-sugar mixture evenly over the dough, then sprinkle ground walnuts (and cinnamon or soaked raisins if using).
  4. Roll the dough tightly along the long edge and cut into 3 cm thick slices.
  5. Arrange slices spaced apart in a greased or parchment-lined round pan (26 cm diameter recommended; smaller pan if using half the dough).
  6. Cover with a plastic bag and let rise for 30-40 minutes.
  7. Bake at 180Β°C for 20 minutes.
  8. Prepare syrup by boiling water and sugar over medium heat until sugar dissolves.
  9. Remove rolls from oven and brush generously with hot syrup. Return to oven for 15 minutes.
  10. Brush again with syrup and bake for an additional 5 minutes.
