Inspired by my favorite Demmers Teehaus treats—almonds coated in white chocolate and dusted with cinnamon—this homemade white chocolate nut spread is perfect for spreading on pancakes, waffles, or wafer sheets. Adapted from David Lebovitz’s Nutella recipe, it combines creamy roasted nuts with luscious white chocolate for a silky, indulgent finish.

🥄 Ingredients
- 125 g blanched almonds
- 75 g cashews
- 300 g quality white chocolate
- 35 g powdered milk
- 80 ml sweet cream (whipping cream)
- 125 ml milk
- 1 tbsp powdered sugar (optional)
- Ground cinnamon (optional)
👩🍳 Instructions
- Roast almonds and cashews at 170°C (340°F) for 5 minutes until lightly toasted.
- Blend nuts in a food processor until a soft, smooth nut butter forms (about 5 minutes). The smoother the butter, the finer the spread.
- Add powdered milk to the nut butter and blend for another minute.
- Melt white chocolate gently over a bain-marie (double boiler).
- Warm cream and milk without boiling.
- Slowly pour cream and milk into the melted chocolate while stirring continuously to form a smooth mixture.
- Add the nut butter to the chocolate mixture and mix vigorously until fully incorporated into a slow-flowing creamy spread.
- Taste and add powdered sugar if desired for extra sweetness.
- Transfer the spread to a jar and refrigerate.
- Optional layering: add a few spoonfuls of spread, sift cinnamon powder on top, then repeat layers until jar is full. After chilling, the spread thickens slightly but remains spreadable.
