Ingredients
- 150 ml milk
- 80 ml strong espresso
- Freshly grated nutmeg (for garnish)
Ginger Syrup:
- 80 ml water
- 75 g sugar
- 1 packet vanilla sugar
- A pinch of cinnamon
- 1 piece of fresh ginger (about 5 cm)
Instructions
- Combine all ginger syrup ingredients in a small saucepan. Bring to a boil and simmer for 15 minutes from the first boil. Strain through a fine tea sieve and set aside.
- Heat 100 ml milk until boiling.
- In a 250 ml glass, pour 30 ml of the hot ginger syrup. Add the hot milk and stir well.
- Froth the remaining milk using an espresso machine steam wand or a milk frother until foamy, like for a cappuccino. Pour the milk foam on top of the milk in the glass.
If you cannot froth milk, simply pour all 150 ml hot milk over the syrup and top with whipped cream instead of foam. - Slowly pour the espresso through the milk foam. The espresso will layer below the foam, creating a beautiful stratified effect.
- Garnish with freshly grated nutmeg on top of the foam (or whipped cream). Serve immediately. Use a straw if the glass has no handle.
